Rainy day smoothie.

After yesterday’s bike ride I couldn’t get out of bed this morning – today is my rest day. 😉

It was a rainy day today. Had a wonderful simply delicious sandwich for lunch. I will probably post it up tomorrow.

Worked on my applications with coffee made with almond milk. My tummy cannot tolerate too much cow’s milk these days. We usually have the 2% partly skimmed, but I’ve opted for almond milk 90% of the time and I feel just fine.

I felt like a protein smoothie for dinner. Thought I would mix things up and try a new flavour. I use the Kaizen protein powder (vanilla & chocolate) and I feel like I’m literally chugging it down. It’s too sweet and….well, I’m not a fan, I will need to switch soon. So I try to cover up the taste by adding a lot of other items to the smoothie to mask the protein taste. I experimented and came up with something new today. You may or may not be a fan 🙂

So here goes.

Banana-Chocolate Mint protein smoothie

– 1 banana

– 1 scoop vanilla protein powder

– 2 tablespoons oat powder

– a few leaves of chocolate mint

– 1/4 tablespoon cinnamon

– 1/2 tablespoon flax powder

– for an extra kick I added chai masala powder (optional)

– 1 cup milk of choice

I personally thought the chocolate mint (which we grow in our garden along with many other herbs) added a special twist to this smoothie. If you want it more sweet you can even throw in some dates! Yum!

I over did it.

I challenged myself to bike all the way to the lake shore.

Total: 28 km = 17.39 miles

My butt feels dead. I need more practice 🙂

I came home, downed a huge flask of water and a carrot muffin.

Unfortunately I didn’t take my phone/camera along so no pretty pictures. It was really beautiful though, with a lot of families hanging out by the lake on this beautiful Sunday evening.

I need to shower power.

Carrot muffins & salad!

How’s everyone doing this Friday 🙂 Any fun plans for tonight or for the weekend?

I can’t believe it was a week ago that I was in Chicago having a great time! This just means I look forward to my next vacation 🙂

Today was my Dad’s birthday and he doesn’t like going all out with the party, cake and such. We had quite a few carrots in the fridge so, I decided to bake him a wonderfully delicious Eggless Carrot Cake, well actually….. Muffins! 🙂

It was a big hit in the house!

I used this page:
and changed things up a bit.

Vegetarian Carrot Cake Ingredients:

1/2 cup Compliments cinnamon applesauce
1.5 cup grated carrots
1 cup pecans/walnuts/nut of choice, chopped
1/2 cup melted butter (W)
1 tsp salt (D)
2 tsp baking powder (D)
3 tsp cinnamon (D)
1 cup white sugar (D)
1 1/4 cups flour (D)
1/2 cup almond milk (W)

Preheat the oven to 325 degrees F.

I mixed the dry (D) ingredients with the cinnamon apple sauce. Next I added the melted butter & almond milk. Finally I added the carrots and my nut of choice, pecans.

You can use a muffin pan or a cake pan. I sprayed a little Pam on the muffin pan and evenly distributed the muffin mix. Baked for about 45 mins.

Mmmmmmm delicious!


With the remaining shredded carrots I made a simple and quick carrot salad!

2 cups shredded carrots
1/2 – 1 cup salted peanuts (I used shelled virginia peanuts)
1 – 2 tsp paprika powder
honey to taste
freshly ground black pepper
salt to taste
– optional: add lemon juice, coriander, green chilli, fresh onion

Whatever floats your boat 😉


Also, my Bro made some dinner for the both of us! It was very tasty and spicy!! Pasta sauce with a LOT of fresh veggies and banana peppers! Instead of pasta, I went with quinoa and sprinkled some peanuts on top.


Time to chillax, sip on this (hot water with lemon basil)….

& end the night with a Gchat date with my Guy ❤

Chicago Eats

5:00 pm and I need me some coffee.

It’s been an off day. I’ve been spilling things, my mind is elsewhere. Lots of things to think about and do this upcoming week….but here’s what I did this past weekend!

I didn’t update over the weekend because well, I was having a wonderful time with my guy in Chicago! We’re doing the long distance thing so it’s certainly nice to get away and see each other at least once in a month or two. Sounds crazy right – AT LEAST meet up once in a month or two! That’s the way it has to be….hopefully just for a little while longer.

We roamed around, loved downtown Chi-town, Buckingham Fountain, Navy Pier, boat rides….! I really wanted to bike along the lakeshore but it was too hot and humid for this. Hopefully next time! 🙂 I can enjoy biking along the lakeshore nearby my house for now!

Food was wonderful! Here are some eats from our Chicago trip:

Pita Heaven, that was absolutely delicious food. We’re both vegetarians so we got this:

A giant arugula salad with goat cheese, almond, tomatoes, honey & balsamic vinaigrette. Spinach pie with side salad and pasta. Falafel wrap (not pictured) with fries!

We also had veggie hot dogs from the hot dog place at Navy Pier. For dessert the Almond Caramel Crisp Popcorn from Garrett.

– Penne pasta, spaghetti, side salad & two beautiful glasses of red wine from an Italian bistro. Ending the meal off with two mugs of cappuccino (mine was almond flavoured) with a delicious giant cookie!

– We also enjoyed a spinach alfredo pizza topped with veggies from Papa Johns

– Green tea froyo from Yogen Fruz

– Chilling at Dunkin Donuts with iced tea & frozen coffee

– A slice of mushroom spinach pizza with side salad from Sarpinos

– I enjoyed this drink from Margaritaville!! Havana Banana, it was delishhh! & beer for the guy 🙂

– Other Margaritaville eats & drinks: spinach & artichoke dip with tortilla chips, tropical fruit margarita (banana & strawberry) which was not so wow, but the bahama mama (soo yumm)!

To sum it all up, we walked a LOT, ate a LOT and along with all this we drank lots and lots of water.

All in all a wonderful weekend 🙂 But very sad that we had to leave and fly back to our separate cities…

My version of Khakhra. Or as I like to call it, Incredible Edible Crispy Roti!

Before I continue onto my post. I want to say how sad I feel to hear about the children who died in India because of pesticide poisoning in their food. People are careless, it is ridiculous. It angers me a lot! My heart goes out to the children and families and I hope that something like this never ever takes place again, anywhere in the world.


I’ve always been a huge fan of the Gujarati snack called Kakhra! It’s crispy, flaky, healthy and pure yumminess!

My family enjoyed the taste of it but I’ve got to get my Guy & also my Gujju-best-friend to try it out soon!

So the reason why I called this the “Incedible Edible Crispy Roti” is that it kinda looks like a Roti and not so much like the khakhra that you get at the stores – perfectly round & flat. Mine are the shapes of Australia, India, Canada…etc. etc. It certainly tasted like khakhra though!

I was very happy with the way it turned out.
So here are the ingredients. It made about 15 mini “Incredible Edible Crispy Rotis”, plus some left over dough in the fridge.


2 cups whole wheat flour
0.5 tablespoon red chilli powder (or more if you like spicy)
0.5 tablespoon turmeric powder
0.5 tablespoon cumin seeds
1.5 tablespoon olive oil/canola oil/your oil of choice
salt to taste
(spray oil for later)

Slowly pour water, little by little, blend everything together a until you get dough. Make sure the dough is not of a sticky consistency, it means you’ve added too much water. So to fix that, add more flour to even it out. 🙂

I used my handy dandy Kitchen Aid Food Processor. I love it!

Separate the dough into balls and roll it out. Flatten the ball as much as possible.  Use a little flour to spread on top of the flattened balls so they don’t stick to the counter.The first few that I rolled out where not thin enough and puffed up. So the next few I rolled them even flatter and they turned out amazingly crispy! Place them on the pan without spraying any oil. Then after you’ve cooked both sides, spray a little Pam oil (or whichever oil you choose) and they’ll get crisp!

Place them in an air tight container. You can play around with the flavours, add masala power, more chilli powder-whatever floats your boat. Have this with yogurt and / or pickle, have it as an afternoon snack with tea.

Monday Monday….

Chillaxing & watching the Bachelorette. Yes, I watch this show. The drama, the alcohol, the shirtless men, what’s not to love? 😉 No matter how many times I say I won’t watch something this silly where 99% of them end up breaking after the show, I am still drawn to this garbage show. Meh, sometimes mindless things are good for you 😉

I’m rooting for Chris! But he’s 27. That is kind of young?

Pretty uneventful day. But I did take some creeper photos….

Our daily visitor! Mr./Mrs. Robin, with a flower petal stuck to the tail! Every afternoon the cutie pie shows up and takes a bath in our bird bath! All puffed up and fuzzy!


Two baby bunnies! Hiding out amongst our plants and flowers. Their Mommy comes back in the evening to be with them.

We also have some beautiful yellow finches who come by everyday and sing happily (& very loudly may I add)!

Ok now back to The Bachelorette 🙂
